  • 1.5 lbs Broccoli cut into bite-sized florets
  • 1 lb Carrots peeled and sliced into 1/2-inch thick rounds or sticks
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • 1/4 cup Parmesan Cheese grated, optional but recommended
  • 2 tbsp Fresh Parsley chopped, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup, or lightly grease it.
  2. In a large mixing bowl, combine the broccoli florets and sliced carrots.
  3. Drizzle the olive oil over the vegetables. Add the garlic powder, onion powder, salt, and black pepper. Toss well to ensure all the vegetables are evenly coated with the oil and seasonings.
Roasting
  1. Spread the seasoned broccoli and carrots in a single layer on the prepared baking sheet. Ensure they are not overcrowded; if necessary, use a second baking sheet to prevent steaming and encourage proper roasting.
  2. Roast for 12-15 minutes. Then, remove from the oven, flip or toss the vegetables with a spatula, and return to the oven. Continue roasting for another 8-10 minutes, or until the vegetables are tender-crisp and lightly caramelized.
  3. If using Parmesan cheese, sprinkle it over the vegetables during the last 5 minutes of roasting, allowing it to melt and form a golden crust.
  4. Remove from oven and transfer to a serving dish. Garnish with fresh chopped parsley, if desired. Serve immediately as a delicious side dish.

Notes

For crispier vegetables, avoid overcrowding the baking sheet. Using two sheets ensures better air circulation. A squeeze of fresh lemon juice after roasting adds a bright, zesty finish.
