- In a mixing bowl, combine olive oil, minced garlic, lime juice, soy sauce, cumin, paprika, oregano, black pepper, and salt. Mix well to form the marinade.
- Place the chicken on a cutting board and pat dry with paper towels. Using a knife, carefully loosen the skin over the chicken breast and drumsticks. Rub the marinade all over the chicken, making sure to get underneath the skin and inside the cavity. Place the chicken in a dish, cover, and refrigerate for at least 4 hours, preferably overnight.
- Preheat the air fryer to 375°F (190°C). Place the marinated chicken in the air fryer basket, breast side up. Cook for 45 to 50 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy.
- Remove the chicken from the air fryer and let it rest for about 10 minutes before carving. Serve with Aji Verde sauce, chopped cilantro, and lime wedges on the side.
Notes
For best results, allow the chicken to marinate overnight. If you do not have an air fryer, you can roast the chicken at 400°F in a conventional oven for about 1 hour or until fully cooked.
