Pesto Chicken Stuffed Spaghetti Squash

Ingredients
  

For the Squash
  • 2 medium (about 3 lbs each) spaghetti squash halved lengthwise and seeded
  • 2 tbsp olive oil divided
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly ground
For the Chicken and Pesto
  • 1 lb boneless skinless chicken breasts cut into 1-inch pieces
  • 0.75 cup basil pesto homemade or high-quality store-bought
  • 1 cup grape tomatoes halved
  • 4 oz fresh mozzarella cubed, or use shredded
For Finishing
  • 0.25 cup fresh basil torn, for garnish
  • 2 tbsp parmesan cheese shaved, optional

Method
 

Roast the Squash
  1. Preheat oven to 400°F. Rub cut sides of squash with 1 tablespoon olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast until tender when pierced with a knife, 35 to 45 minutes depending on size. The flesh should shred easily into strands when scraped with a fork.
Cook the Chicken
  1. While squash roasts, heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with a pinch of salt and pepper. Cook until golden brown on all sides and cooked through, 6 to 8 minutes total. The internal temperature should reach 165°F. Transfer to a plate and set aside.
Scrape and Toss
  1. When squash is cool enough to handle, use a fork to scrape the flesh into strands, leaving about a half-inch border intact so the shells hold their shape. Transfer strands to a large bowl, leaving the hollowed shells on the baking sheet.
  2. Add pesto, cooked chicken, and tomatoes to the squash strands. Toss until everything is evenly coated. The residual heat from the squash will warm the pesto beautifully.
Stuff and Finish
  1. Divide the mixture evenly among the squash shells. Top with mozzarella cubes. Return to the oven and bake until cheese is melted and bubbling, 8 to 10 minutes.
  2. Let rest 5 minutes, then garnish with fresh basil and parmesan if using. Serve warm, scooping the filling and soft squash walls together.

Notes

For the most flavor, make your own pesto with fresh basil, pine nuts, garlic, parmesan, and good olive oil - it takes 5 minutes in a food processor. The squash can be roasted a day ahead; just scrape the strands and refrigerate until ready to assemble. For a vegetarian version, swap the chicken for white beans or roasted mushrooms.
