- Grab two 16-ounce (or four 8-ounce) jars or airtight containers. These will be where your delicious overnight oats come to life!
- In each jar, evenly divide the rolled oats and chia seeds. Give them a little shake to combine.
- Now, spoon in the pistachio butter, maple syrup, vanilla extract, and that tiny pinch of salt into each jar.
- Carefully pour the milk over the ingredients in each jar, ensuring everything is submerged.
- Stir everything together thoroughly with a spoon, making sure there are no clumps of oats or chia seeds stuck to the bottom. Scrape down the sides if needed; you want all the ingredients fully incorporated for the best texture.
- Place lids securely on your jars and pop them in the refrigerator for at least 4 hours, but preferably overnight (8-12 hours). This allows the oats and chia seeds to fully absorb the liquid and thicken to a wonderfully creamy consistency.
- The next morning, give your oats a quick stir. If they're a little too thick for your liking, just add a splash more milk until you reach your desired consistency. Top with a generous sprinkle of chopped pistachios and any fresh fruit you love, then dig into your easy, healthy breakfast!

If you can't find pistachio butter, you can make your own by blending shelled pistachios in a food processor until smooth, adding a tiny bit of neutral oil (like grapeseed or avocado) if needed to help it blend. For a completely vegan option, ensure you use a plant-based milk (like almond or oat) and maple syrup instead of honey. If your oats are too thick in the morning, simply add a splash more milk (dairy or non-dairy) until they reach your perfect creamy texture; if they're too thin, add a tiny bit more chia seeds and let them sit for another 30 minutes.
