Pumpkin Curry with Chickpeas

Aromatics & Spices
  • 1 large yellow onion diced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 2 tbsp curry powder mild or hot
  • 1 tsp ground cumin
  • 0.25 tsp cayenne pepper optional, for heat
Main Ingredients
  • 15 oz pumpkin puree 1 can, not pumpkin pie filling
  • 14 oz coconut milk 1 can, full-fat
  • 15 oz chickpeas 1 can, drained and rinsed
  • 0.5 cup vegetable broth low-sodium
  • 4 oz baby spinach about 4 cups, roughly chopped
For Finishing
  • 1 lime juiced, about 2 tbsp
  • 0.25 cup fresh cilantro chopped
  • 2 tbsp coconut oil for cooking
  • 1 tsp kosher salt plus more to taste

Method
 

Prep
  1. Heat coconut oil in a large Dutch oven over medium heat. Add the diced onion and cook for 5-6 minutes until softened and just starting to turn golden at the edges. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  2. Add the curry powder, cumin, and cayenne (if using) to the pot. Stir constantly for 30 seconds until the spices smell toasty and darken slightly - this wakes up their flavor.
  3. Scrape in the pumpkin puree and stir to combine with the spices and aromatics. Pour in the coconut milk and vegetable broth, whisking until smooth. The mixture will look thin - that's normal.
  4. Add the drained chickpeas and bring to a gentle simmer. Reduce heat to medium-low, cover partially, and cook for 15 minutes, stirring occasionally, until the curry thickens to coat the back of a spoon.
  5. Stir in the chopped spinach a handful at a time, letting each batch wilt before adding more. This takes about 2 minutes total. Remove from heat.
  6. Stir in the fresh lime juice and season with salt to taste. Ladle into bowls and top with chopped cilantro. Serve over steamed rice with extra lime wedges on the side.

Notes

For deeper flavor, use homemade roasted pumpkin puree when in season - roast cubed sugar pumpkin at 400F until caramelized, then blend. This curry thickens considerably as it cools; thin leftovers with a splash of water or broth when reheating. Make it a day ahead - the flavors meld beautifully overnight.
