Marinate the Steak
- In a medium bowl, combine the thinly sliced steak with 2 tbsp soy sauce, 1 tbsp cornstarch, sesame oil, and black pepper. Toss well to coat each piece. Set aside to marinate for at least 10 minutes while you prepare the other ingredients.
Prepare the Sauce
- In a separate small bowl or liquid measuring cup, whisk together all the stir fry sauce ingredients: beef broth, 1/4 cup soy sauce, oyster sauce, brown sugar, rice vinegar, and 1 tsp cornstarch. Whisk until the cornstarch and sugar are fully dissolved. Set aside.
Cook the Stir Fry
- Heat 1 tablespoon of oil in a large wok or skillet over high heat until it just begins to smoke. Add the marinated steak in a single layer, working in batches if necessary to avoid overcrowding the pan. Cook for 1-2 minutes per side, until browned and seared. Remove the steak from the wok and set it aside on a plate.
- Reduce the heat to medium-high. Add the remaining 1 tablespoon of oil to the wok. Add the broccoli florets and stir-fry for 1-2 minutes. Add 2 tablespoons of water, cover the wok, and let the broccoli steam for 2-3 minutes, until it's tender-crisp and bright green.
- Uncover the wok and push the broccoli to the sides to create a space in the center. Add the minced garlic and grated ginger to the center and cook for about 30 seconds until fragrant, stirring constantly.
Combine and Finish
- Return the seared steak to the wok with the broccoli. Give the stir fry sauce a quick whisk again, then pour it over everything in the wok.
- Bring the sauce to a simmer, stirring constantly. Cook for 1-2 minutes, until the sauce thickens and coats the steak and broccoli beautifully.
- Remove from heat and serve immediately over hot cooked rice or noodles. Garnish with toasted sesame seeds and sliced green onions, if desired.
Notes
For extra tender steak, freeze it for 20-30 minutes before slicing; this makes it much easier to slice thinly against the grain. Don't overcrowd the pan when searing the steak; cook in batches to ensure a good sear rather than steaming the meat. You can add other vegetables like sliced carrots, bell peppers, or onions along with the broccoli. Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
