Ingredients
  

For the Garlic Croutons
  • 2 cups day-old bread cubed (e.g., sourdough or French bread)
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
For the Creamy Caesar Dressing
  • 1/2 cup mayonnaise (full-fat recommended)
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 clove garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp anchovy paste optional, but highly recommended for authentic flavor
  • 1/4 tsp black pepper
  • 1-2 tbsp water to thin to desired consistency
For the Salad
  • 2 medium English cucumbers thinly sliced into rounds or half-moons
  • 1 head Romaine lettuce chopped
  • 1 pint cherry tomatoes halved
  • 1/4 red onion very thinly sliced
  • 1/4 cup shaved or grated Parmesan cheese for garnish

Method
 

Prepare the Garlic Croutons
  1. Preheat your oven to 375°F (190°C) or air fryer to 350°F (175°C). In a medium bowl, toss the cubed bread with olive oil, garlic powder, salt, and pepper until evenly coated.
  2. Spread the seasoned bread cubes in a single layer on a baking sheet (or in the air fryer basket). Bake for 8-12 minutes, tossing halfway, or air fry for 5-7 minutes, shaking halfway, until golden brown and crispy. Let cool.
Make the Creamy Caesar Dressing
  1. In a small bowl, whisk together the mayonnaise, Dijon mustard, fresh lemon juice, Worcestershire sauce, minced garlic, grated Parmesan cheese, anchovy paste (if using), and black pepper until well combined.
  2. Gradually add 1-2 tablespoons of water, whisking until the dressing reaches your desired smooth and pourable consistency. Taste and adjust seasonings if needed.
Assemble the Cucumber Caesar Salad
  1. In a large mixing bowl, combine the thinly sliced cucumbers, chopped Romaine lettuce, halved cherry tomatoes, and thinly sliced red onion.
  2. Add the cooled garlic croutons and 1/4 cup shaved or grated Parmesan cheese to the bowl with the vegetables.
  3. Pour about half to two-thirds of the prepared Caesar dressing over the salad ingredients. Gently toss until all components are lightly coated. Add more dressing if desired.
  4. Serve immediately, garnished with additional shaved Parmesan cheese if desired.

Notes

For an extra protein boost, add grilled chicken, shrimp, or chickpeas to your Cucumber Caesar Salad. The croutons can be made ahead of time and stored in an airtight container for up to 3 days. The dressing can also be prepared 2-3 days in advance and stored in the refrigerator. If it thickens, whisk in a little more water or lemon juice before serving. For the crispiest salad, dress just before serving.
