Ingredients

For the Salad
  • 6 cups Seedless Watermelon cubed into 1-inch pieces
  • 6 oz Feta Cheese crumbled
  • 1/4 cup Red Onion thinly sliced or finely diced
  • 1/4 cup Fresh Mint finely chopped
  • 1/4 cup Fresh Basil finely chopped (optional, but recommended)
For the Lime-Honey Dressing
  • 3 tbsp Lime Juice freshly squeezed
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Honey or maple syrup for a vegan option
  • 1/4 tsp Sea Salt or to taste
  • 1/8 tsp Black Pepper freshly ground, or to taste

Equipment

  • Large Mixing Bowl
  • Small mixing bowl
  • Whisk
  • Cutting board
  • Sharp knife
  • Measuring Cups
  • Measuring Spoons

Method

Prepare Ingredients
  1. Using a sharp knife, carefully cut the watermelon into 1-inch cubes. If not using seedless watermelon, remove any seeds.
  2. Thinly slice or finely dice the red onion. Finely chop the fresh mint and basil (if using). Crumble the feta cheese.
Make the Dressing
  1. In a small mixing bowl, combine the freshly squeezed lime juice, extra virgin olive oil, honey, sea salt, and black pepper. Whisk until well emulsified and the honey is fully dissolved.
Assemble the Salad
  1. In a large mixing bowl, gently combine the cubed watermelon, crumbled feta cheese, sliced red onion, chopped mint, and chopped basil.
  2. Pour the prepared lime-honey dressing over the watermelon mixture. Gently toss to ensure all ingredients are evenly coated.
  3. Serve immediately for the best texture and flavor, or chill for 10-15 minutes before serving to enhance coolness. Enjoy your refreshing watermelon salad with feta cheese!

Notes

For an extra touch, you can drizzle a balsamic glaze over the finished salad. To prevent the salad from becoming watery, try to serve it within an hour or two of preparation. If preparing ahead, keep the dressing separate and add just before serving. Choose a firm, heavy watermelon for the best flavor.
