Prepare Ingredients
- Using a sharp knife, carefully cut the watermelon into 1-inch cubes. If not using seedless watermelon, remove any seeds.
- Thinly slice or finely dice the red onion. Finely chop the fresh mint and basil (if using). Crumble the feta cheese.
Make the Dressing
- In a small mixing bowl, combine the freshly squeezed lime juice, extra virgin olive oil, honey, sea salt, and black pepper. Whisk until well emulsified and the honey is fully dissolved.
Assemble the Salad
- In a large mixing bowl, gently combine the cubed watermelon, crumbled feta cheese, sliced red onion, chopped mint, and chopped basil.
- Pour the prepared lime-honey dressing over the watermelon mixture. Gently toss to ensure all ingredients are evenly coated.

Notes
For an extra touch, you can drizzle a balsamic glaze over the finished salad. To prevent the salad from becoming watery, try to serve it within an hour or two of preparation.
