Prepare the Carrots
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the peeled and cut carrots with olive oil, sea salt, black pepper, and smoked paprika (if using). Toss well until the carrots are evenly coated.
- Spread the seasoned carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This helps them roast evenly and caramelize properly.
Roast the Carrots
- Roast for 25-30 minutes, or until the carrots are tender-crisp and lightly caramelized at the edges. Flip them halfway through the cooking time to ensure even browning.
- Once roasted, remove the carrots from the oven and set aside to cool slightly while you prepare the whipped feta.
Make the Whipped Feta
- While the carrots are roasting, combine the crumbled feta cheese, softened cream cheese, extra virgin olive oil, fresh lemon juice, and a pinch of black pepper in a food processor.
- Blend until the mixture is completely smooth and creamy. If the mixture is too thick, add milk or water one tablespoon at a time until you reach your desired consistency. Taste and add an optional pinch of salt if needed (feta is naturally salty).
Assemble and Serve
- To serve, spread the whipped feta evenly across a serving platter or individual plates.
- Arrange the warm roasted carrots on top of the whipped feta.
- Drizzle generously with honey (or maple syrup) and sprinkle with fresh chopped parsley or dill, and red pepper flakes if you desire a bit of heat. Serve immediately and enjoy!

For best results, ensure your cream cheese is at room temperature for a smoother whipped feta. Carrots can be roasted up to a day ahead and gently reheated in the oven or microwave. The whipped feta can be made 2-3 days in advance and stored in an airtight container in the refrigerator; let it come to room temperature before serving for the best texture.
