Ingredients
  

For the Roasted Carrots
  • 1.5 lbs carrots medium, peeled and trimmed, cut into 1/2-inch thick sticks or rounds
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper freshly ground
  • 1/2 tsp smoked paprika optional, for extra depth
For the Whipped Feta
  • 8 oz feta cheese block, crumbled
  • 4 oz cream cheese full-fat, softened
  • 2 tbsp olive oil extra virgin
  • 1 tbsp lemon juice freshly squeezed
  • 1-2 tbsp milk or water as needed for consistency
  • pinch salt optional, taste first as feta is salty
  • pinch black pepper freshly ground
For Garnish
  • 1 tbsp fresh parsley or dill chopped
  • 1 tbsp honey or maple syrup, for drizzling
  • 1 tsp red pepper flakes optional, for a subtle kick

Method
 

Prepare the Carrots
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the peeled and cut carrots with olive oil, sea salt, black pepper, and smoked paprika (if using). Toss well until the carrots are evenly coated.
  3. Spread the seasoned carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This helps them roast evenly and caramelize properly.
Roast the Carrots
  1. Roast for 25-30 minutes, or until the carrots are tender-crisp and lightly caramelized at the edges. Flip them halfway through the cooking time to ensure even browning.
  2. Once roasted, remove the carrots from the oven and set aside to cool slightly while you prepare the whipped feta.
Make the Whipped Feta
  1. While the carrots are roasting, combine the crumbled feta cheese, softened cream cheese, extra virgin olive oil, fresh lemon juice, and a pinch of black pepper in a food processor.
  2. Blend until the mixture is completely smooth and creamy. If the mixture is too thick, add milk or water one tablespoon at a time until you reach your desired consistency. Taste and add an optional pinch of salt if needed (feta is naturally salty).
Assemble and Serve
  1. To serve, spread the whipped feta evenly across a serving platter or individual plates.
  2. Arrange the warm roasted carrots on top of the whipped feta.
  3. Drizzle generously with honey (or maple syrup) and sprinkle with fresh chopped parsley or dill, and red pepper flakes if you desire a bit of heat. Serve immediately and enjoy!

For best results, ensure your cream cheese is at room temperature for a smoother whipped feta. Carrots can be roasted up to a day ahead and gently reheated in the oven or microwave. The whipped feta can be made 2-3 days in advance and stored in an airtight container in the refrigerator; let it come to room temperature before serving for the best texture.
