Ingredients
  

For the Steaks
  • 1.5 lb ground beef 80/20 for best flavor
  • 0.5 cup breadcrumbs
  • 1 large egg lightly beaten
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp onion powder
  • 0.75 tsp salt divided
  • 0.5 tsp black pepper freshly ground, divided
  • 1 tbsp vegetable oil
For the Mushroom Gravy
  • 8 oz cremini mushrooms sliced
  • 1 small yellow onion finely diced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cup beef broth low sodium
  • 1 tbsp ketchup
  • 1 tsp fresh thyme chopped, or 1/2 tsp dried

Method
 

Make and Sear the Steaks
  1. In a large bowl, gently combine ground beef, breadcrumbs, egg, Worcestershire sauce, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix with your hands just until combined - do not overwork. Divide into 4 equal portions and shape into oval patties about 3/4 inch thick.
  2. Heat oil in a large skillet over medium-high heat until shimmering. Add patties and cook until well-browned, about 4 minutes per side. They will not be cooked through. Transfer to a plate.
Make the Mushroom Gravy
  1. Reduce heat to medium. Add butter, mushrooms, and onion to the same skillet. Cook, stirring occasionally, until mushrooms release their liquid and begin to brown, about 6 minutes. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  2. Sprinkle flour over the mushrooms and cook, stirring constantly, for 1 minute until flour turns golden. Slowly whisk in beef broth, scraping up any browned bits from the pan. Stir in ketchup and thyme.
  3. Return patties and any accumulated juices to the skillet. Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook until gravy thickens and patties reach 160°F, about 10 minutes. Taste and adjust seasoning. Serve hot over mashed potatoes or egg noodles.

Notes

For deeper flavor, use a mix of ground beef and ground pork. The patties will be more tender if you handle the meat gently and do not overmix. Leftovers keep refrigerated for 3 days and reheat beautifully in the microwave or covered in a 325°F oven.
