Salmon in Foil with Vegetables

Ingredients
  

For the Salmon and Vegetables
  • 1.5 lbs salmon fillets skinless, about 6 oz each
  • 1 lb asparagus tough ends trimmed
  • 2 cups cherry tomatoes halved
  • 1 lemon thinly sliced
For the Garlic Butter
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 0.75 tsp salt plus more for vegetables
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp fresh dill chopped, for serving

Method
 

Prep
  1. Preheat oven to 400F. Cut four 12x18 inch sheets of heavy-duty foil and arrange on a rimmed baking sheet.
  2. In a small bowl, whisk together melted butter, minced garlic, Dijon mustard, honey, salt, and pepper until smooth.
Assemble packets
  1. Divide asparagus and cherry tomatoes among the four foil sheets, placing them in the center. Season vegetables lightly with salt. Nestle a salmon fillet on top of each vegetable pile, then lay 2-3 lemon slices over each piece of salmon.
  2. Spoon the garlic butter evenly over each salmon fillet, making sure some drips down onto the vegetables. Fold the long sides of foil up and over, then crimp tightly to seal, leaving a little air space inside for steam. Fold and crimp the short ends to create fully sealed packets.
Bake
  1. Bake for 18-20 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145F. The vegetables should be tender but still have some bite.
Serve
  1. Carefully open packets (hot steam will escape). Slide contents onto plates or serve directly from the foil. Sprinkle with fresh dill and an extra squeeze of lemon if desired.

Notes

For even cooking, choose salmon fillets of similar thickness. If your fillets are thin (under 1 inch), check for doneness at 15 minutes. Swap asparagus for green beans or zucchini coins based on what looks good. These packets can be assembled up to 4 hours ahead and refrigerated until ready to bake.
