Savory Beef and Mushroom Pita Pockets

Ingredients
  

For the Beef & Mushroom Filling
  • 1 tbsp olive oil
  • 1 lb ground beef 85-90% lean
  • 1 medium yellow onion finely diced
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt or to taste
  • 2 tbsp beef broth or water
For Serving
  • 4 pita breads whole wheat or white
  • 1/2 cup plain Greek yogurt or tzatziki sauce
  • 1/2 cup chopped lettuce romaine or iceberg
  • 1/4 cup diced tomato
  • 2 tbsp chopped fresh parsley for garnish

Method
 

Prepare the Beef & Mushroom Filling
  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  2. Add diced onion to the skillet and cook for 3-4 minutes until softened.
  3. Stir in sliced mushrooms and cook for another 5-7 minutes, until mushrooms are tender and have released their liquid.
  4. Add minced garlic, oregano, smoked paprika, salt, and black pepper. Cook for 1 minute more, stirring constantly, until fragrant.
  5. Pour in beef broth (or water) and stir, scraping any browned bits from the bottom of the pan. Cook for 1-2 minutes until the liquid has mostly evaporated. Taste and adjust seasoning if needed. Remove from heat.
Prepare and Assemble Pita Pockets
  1. While the filling is cooking, prepare the pita bread. You can warm them in an air fryer at 350°F (175°C) for 2-3 minutes, in a toaster oven, or on a dry skillet until soft and pliable. If using a toaster, cut the pita in half before warming.
  2. Carefully cut each warm pita bread in half to create pockets.
  3. To assemble, spread a tablespoon of Greek yogurt inside each pita pocket.
  4. Spoon a generous amount of the beef and mushroom filling into each pocket.
  5. Top with chopped lettuce, diced tomato, and a sprinkle of fresh parsley.
  6. Serve immediately.

Notes

For extra flavor, add a squeeze of lemon juice to the filling at the very end. You can substitute ground turkey or chicken for ground beef. Prepare the filling ahead of time and store in the refrigerator for up to 3 days. Reheat gently before assembling. Other great toppings include crumbled feta cheese, sliced cucumbers, or a drizzle of hot sauce.
