Savory Corn Fritter Breakfast Sandwiches with Spicy Maple Aioli

Ingredients
  

For the Corn Fritters
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup milk any kind
  • 1 large egg
  • 1 tbsp melted butter unsalted
  • 1 1/2 cups sweet corn kernels fresh, frozen & thawed, or canned & drained
  • 2 tbsp fresh chives chopped
  • 1/4 cup neutral oil for frying, e.g., canola, vegetable
For the Spicy Maple Aioli
  • 1/2 cup mayonnaise
  • 1 tbsp maple syrup
  • 1 tsp sriracha or to taste
  • 1/2 tsp smoked paprika
  • 1 tsp fresh lemon juice
  • Pinch salt
For the Sandwich Assembly
  • 4 English muffins
  • 8 slices cooked bacon crispy
  • 4 large eggs
  • 2 tbsp milk for scrambled eggs
  • To taste Salt and black pepper
  • 4 slices cheddar cheese or preferred cheese
  • To taste Butter for cooking eggs and toasting muffins

Method
 

Prepare the Spicy Maple Aioli
  1. In a small bowl, whisk together the mayonnaise, maple syrup, sriracha, smoked paprika, lemon juice, and a pinch of salt until well combined. Taste and adjust sriracha or maple syrup as desired. Cover and refrigerate until ready to use.
Prepare the Corn Fritter Batter
  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, and garlic powder.
  2. In a separate small bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the corn kernels and chopped chives.
Cook the Corn Fritters
  1. Heat 1/4 cup neutral oil in a large non-stick skillet over medium heat.
  2. Once the oil is shimmering, drop 1/4 cup portions of the fritter batter into the hot oil, flattening slightly with the back of a spoon. Do not overcrowd the pan; cook in batches if necessary.
  3. Cook for 3-4 minutes per side, or until golden brown and cooked through. Transfer cooked fritters to a wire rack lined with paper towels to drain excess oil. You should get 8 fritters. Keep warm.
Prepare the Scrambled Eggs
  1. Crack 4 large eggs into a bowl, add 2 tbsp milk, salt, and pepper. Whisk well until light and frothy.
  2. Melt a small pat of butter in a clean non-stick skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently with a spatula, until the eggs are set but still soft and fluffy. Divide into 4 equal portions.
Assemble the Sandwiches
  1. Split and toast the English muffins. Lightly butter the toasted sides if desired.
  2. On the bottom half of each English muffin, spread a generous layer of the spicy maple aioli.
  3. Place a slice of cheddar cheese on top of the aioli.
  4. Add a portion of scrambled eggs on top of the cheese.
  5. Layer with two crispy bacon slices.
  6. Top with two warm corn fritters.
  7. Spread a little more aioli on the inside of the top English muffin half before placing it on the sandwich. Serve immediately and enjoy!

Notes

For a slightly healthier option, you can bake the corn fritters at 375°F (190°C) for 15-20 minutes, flipping halfway, or air fry at 375°F (190°C) for 10-12 minutes. They won't be as crispy as pan-fried but will still be delicious. The spicy maple aioli can be made a day ahead and stored in the refrigerator. Leftover fritters can be reheated in a toaster oven or air fryer to regain crispness.
