Preparation
- Pat the beef stew meat dry with paper towels. In a large bowl, toss the beef with onion powder, garlic powder, smoked paprika, black pepper, and salt until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Sear the beef tips in batches for 2-3 minutes per side until browned. This step adds a deeper flavor, but you can skip it if short on time.
Slow Cooking
- Transfer the seared beef (or raw seasoned beef) to the 6-quart slow cooker. Add the chopped yellow onion and minced garlic. Pour in the beef broth and Worcestershire sauce. Stir gently to combine.
- Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the beef is fork-tender.
Finishing the Gravy
- Once the beef is tender, carefully remove the beef tips from the slow cooker with a slotted spoon and set aside.
- In a small bowl, whisk together the cornstarch and cold water until a smooth slurry forms. Pour the cornstarch slurry into the liquid remaining in the slow cooker.
- Turn the slow cooker to HIGH (or if your slow cooker has a "Sauté" or "Simmer" function, use that, or transfer to a pot on the stove). Whisk continuously for 5-10 minutes until the gravy thickens to your desired consistency.
- Return the cooked beef tips to the thickened gravy in the slow cooker. Stir to coat the beef. Serve hot over mashed potatoes, egg noodles, or rice.
Notes
For an even richer gravy, you can add 1/4 cup of red wine along with the beef broth in step 3.
