Prepare the Oven and Vegetables
- Preheat your oven to 375°F (190°C). If your skillet handle isn't oven-safe, wrap it in foil.
- Heat olive oil in a 10-inch oven-safe non-stick skillet over medium heat. Add the chopped yellow onion and sauté for 3-4 minutes until softened and translucent.
- Add the minced garlic, diced bell pepper, diced zucchini, and sliced mushrooms to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
- Stir in the baby spinach and halved cherry tomatoes. Cook for 1-2 minutes until the spinach wilts. Remove the skillet from the heat and spread the vegetables evenly across the bottom.
Assemble and Cook the Frittata
- In a large mixing bowl, whisk together the eggs, milk (or cream), shredded cheese, grated Parmesan cheese, salt, black pepper, and dried Italian herbs (if using) until well combined and slightly frothy.
- Pour the egg mixture evenly over the vegetables in the skillet. Gently shake the pan to ensure the eggs settle around the vegetables.
- Return the skillet to the stovetop over medium-low heat. Cook for 3-5 minutes, without stirring, until the edges of the frittata begin to set and pull away from the sides.
- Carefully transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is puffed, golden brown on top, and set in the center. A knife inserted into the center should come out clean.
Serve
- Remove the frittata from the oven and let it cool in the skillet for 5-10 minutes before slicing. This allows it to set completely and prevents it from deflating too much.
- Slice into wedges and serve warm. Garnish with fresh herbs if desired.

Vegetable Variations: Feel free to use any vegetables you have on hand! Broccoli florets, asparagus, sun-dried tomatoes, or cooked sweet potato cubes work wonderfully. Just ensure denser vegetables are cooked until tender before adding the egg mixture.
