Ingredients
  

For the Savory Sauce
  • 1/4 cup Low-sodium soy sauce or tamari for a gluten-free option
  • 1/4 cup Beef broth low-sodium
  • 2 tbsp Honey or maple syrup
  • 1 tbsp Cornstarch
  • 1 tsp Toasted sesame oil
  • 1 tsp Rice vinegar
  • 1/4 tsp Red pepper flakes optional, adjust to your spice preference
For the Stir-Fry
  • 1 lb Lean ground beef 85/15 or 90/10 recommended
  • 1 tbsp Avocado oil or other neutral high-heat oil
  • 1 large head Broccoli cut into bite-sized florets (about 5 cups)
  • 3 cloves Garlic minced
  • 1 tbsp Fresh ginger grated
  • 1/4 cup Water for steaming the broccoli
  • 1 tbsp Toasted sesame seeds for garnish
  • 2 Green onions thinly sliced, for garnish

Method
 

Prepare the Sauce
  1. In a small bowl, whisk together all the sauce ingredients: low-sodium soy sauce, beef broth, honey, cornstarch, toasted sesame oil, rice vinegar, and red pepper flakes (if using). Set the sauce aside.
Cook the Beef and Broccoli
  1. Heat the avocado oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it is fully browned, about 5-7 minutes. Drain any excess grease from the skillet.
  2. Add the minced garlic and grated ginger to the beef. Cook for 1 minute, stirring constantly, until fragrant.
  3. Add the broccoli florets and the 1/4 cup of water to the skillet. Immediately cover with a lid and let the broccoli steam for 3-4 minutes, or until it is tender-crisp to your liking.
  4. Uncover the skillet. Give the sauce a final quick whisk to ensure the cornstarch is incorporated, then pour it over the beef and broccoli.
  5. Bring the mixture to a simmer, stirring gently to coat everything. Cook for 1-2 minutes until the sauce has thickened.
Serve
  1. Remove from heat and serve immediately. Garnish with toasted sesame seeds and sliced green onions. This dish pairs perfectly with steamed rice or noodles.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken upon reheating; a splash of water can help loosen it.
Variations: Feel free to add other quick-cooking vegetables like sliced bell peppers, mushrooms, or shredded carrots. Add them to the skillet along with the broccoli.
Meal Prep: You can chop the broccoli, mince the garlic/ginger, and mix the sauce ahead of time to make cooking even faster.
