  • 0.5 lb large shrimp peeled, deveined, tails off
  • 0.5 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper freshly ground
For the Avocado Toast
  • 4 slices sourdough or whole-grain bread
  • 2 ripe avocados
  • 1 tbsp lime juice freshly squeezed
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 0.25 tsp red pepper flakes optional, for a kick
For Garnish
  • 2 tbsp fresh cilantro or chives chopped

Method
 

Prep the Shrimp & Avocado
  1. Pat the peeled and deveined shrimp thoroughly dry with paper towels. Mince the garlic cloves. Halve, pit, and scoop the flesh from the ripe avocados into a medium mixing bowl.
Season and Cook Shrimp
  1. In a medium bowl, toss the prepared shrimp with 0.5 tbsp olive oil, minced garlic, smoked paprika, 0.25 tsp salt, and 0.25 tsp black pepper until evenly coated. Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and opaque throughout. Remove from heat and set aside.
Prepare Avocado Spread
  1. To the bowl with avocado flesh, add the lime juice, 0.5 tsp salt, 0.25 tsp black pepper, and red pepper flakes (if using). Use a fork or potato masher to mash the avocado until it's chunky-smooth, or to your preferred consistency.
Assemble the Toast
  1. Toast the bread slices in a toaster or toaster oven until they are golden brown and crisp.
  2. Evenly spread the mashed avocado mixture over each slice of toasted bread. Arrange a generous portion of the cooked shrimp on top of the avocado. Sprinkle with freshly chopped cilantro or chives and serve immediately.

Notes

1. **Choosing Avocados:** For the best texture, select avocados that are ripe but still slightly firm. If your avocados are very soft, you might prefer to thinly slice them instead of mashing for a different presentation.
2. **Shrimp Seasoning Variations:** Feel free to swap the smoked paprika for a pinch of Old Bay seasoning or a touch of cayenne pepper if you're looking for a different flavor profile or more heat.
