Ingredients
  

For the Beef Marinade
  • 1 lb Beef Flank Steak thinly sliced against the grain
  • 2 tbsp Soy Sauce
  • 1 tbsp Cornstarch
  • 1 tsp Sesame Oil
  • 1/2 tsp Black Pepper
For the Sauce
  • 1 cup Beef Broth
  • 1/4 cup Soy Sauce
  • 2 tbsp Oyster Sauce
  • 1 tbsp Brown Sugar packed
  • 1 tbsp Rice Vinegar
  • 1 tsp Fresh Ginger grated
  • 2 cloves Garlic minced
  • 1 tbsp Cornstarch
  • 2 tbsp Water for cornstarch slurry
For the Ramen
  • 4 Ramen Noodles (3 oz) packages, instant ramen without seasoning packets
  • 4 cups Broccoli Florets fresh or frozen
  • 2 tbsp Vegetable Oil divided
  • 1 tbsp Sesame Seeds for garnish
  • 2 Green Onions sliced, for garnish

Method
 

Prepare the Beef
  1. In a medium bowl, combine the thinly sliced beef with 2 tbsp soy sauce, 1 tbsp cornstarch, 1 tsp sesame oil, and 1/2 tsp black pepper. Toss to coat evenly. Let marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
Prepare the Sauce
  1. In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, oyster sauce, brown sugar, rice vinegar, grated ginger, and minced garlic. In a separate tiny bowl, mix 1 tbsp cornstarch with 2 tbsp water to create a slurry. Set both aside.
Cook the Components
  1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes until tender-crisp. Remove the broccoli from the skillet and set aside.
  2. Add the remaining 1 tbsp vegetable oil to the same skillet. Increase heat to high. Once hot, add the marinated beef in a single layer (cook in batches if necessary to avoid overcrowding) and sear for 2-3 minutes per side until browned and cooked through. Remove the beef from the skillet and set aside with the broccoli.
  3. Reduce heat to medium. Pour the prepared sauce mixture into the skillet. Bring to a simmer, then slowly whisk in the cornstarch slurry. Cook, stirring constantly, for 1-2 minutes until the sauce thickens to your desired consistency.
  4. While the sauce is simmering, bring a large pot of water to a boil. Add the ramen noodles (without seasoning packets) and cook according to package directions, usually 2-3 minutes, until just tender. Drain well.
Combine and Serve
  1. Add the cooked beef, broccoli, and drained ramen noodles to the skillet with the thickened sauce. Toss everything gently to coat evenly.
  2. Divide the Beef and Broccoli Ramen among bowls. Garnish with sesame seeds and sliced green onions before serving warm.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce or a drizzle of sriracha when serving. Ensure your beef is sliced very thinly against the grain for maximum tenderness. Partially freezing the beef for 20-30 minutes before slicing can make this easier.
