Slow Cooker Chicken Ratatouille

Tender chicken thighs simmer all day with summer vegetables in a rich, herby tomato sauce for an effortless one-pot dinner.

Ingredients
  

For the Chicken
  • 2 lbs bone-in, skin-on chicken thighs about 6 thighs
  • 1 tsp kosher salt divided
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp olive oil
For the Vegetables
  • 1 lb eggplant cut into 1-inch cubes, no need to peel
  • 2 medium zucchini cut into 1-inch half moons
  • 1 large yellow onion diced
  • 1 red bell pepper stemmed, seeded, cut into 1-inch pieces
  • 4 cloves garlic minced
For the Sauce
  • 28 oz crushed tomatoes one can
  • 2 tbsp tomato paste
  • 1.5 tsp dried herbes de Provence or dried Italian seasoning
  • 0.25 cup fresh basil torn, for serving

Method
 

Prep
  1. Pat chicken thighs dry with paper towels. Season with 0.5 teaspoon salt and the pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken skin-side down and cook without moving until deeply golden, 5 to 6 minutes. Flip and cook 2 minutes more. Transfer to a plate; the chicken will not be cooked through.
  2. Pour off all but 1 tablespoon fat from the skillet. Add onion and bell pepper; cook over medium heat until softened and lightly browned at the edges, 4 to 5 minutes. Stir in garlic and cook until fragrant, 30 seconds. Scrape this mixture into the slow cooker.
Build the base
  1. To the slow cooker, add eggplant, zucchini, crushed tomatoes, tomato paste, herbes de Provence, and remaining 0.5 teaspoon salt. Stir well to combine. Nestle the seared chicken thighs on top, skin-side up, pouring in any accumulated juices.
Slow cook
  1. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until chicken is fall-off-the-bone tender and vegetables are soft but not mushy. The eggplant should collapse into the sauce and the chicken should register 165 degrees F on an instant-read thermometer.
Finish and serve
  1. Taste the sauce and adjust salt if needed. If the sauce seems too thin, remove the chicken and simmer the vegetables on HIGH with the lid off for 15 minutes. Serve hot, scattered with fresh basil, alongside crusty bread or over polenta.

Notes

Bone-in thighs stay juicier than boneless during long cooking, but you can substitute boneless thighs; reduce cook time by 1 hour on LOW. For a thicker, more concentrated sauce, prop the lid slightly ajar with a wooden spoon for the final hour. Leftovers keep refrigerated for 4 days and taste even better the next day.
