Slow Cooker Vegetable Stew

Ingredients
  

Vegetables
  • 1.5 lb russet potatoes peeled and cut into 1-inch chunks
  • 3 large carrots cut into 1/2-inch rounds
  • 3 celery ribs cut into 1/2-inch pieces
  • 1 large yellow onion diced
  • 8 oz cremini mushrooms quartered
  • 1 cup frozen green peas no need to thaw
Aromatics and Seasoning
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary crushed between fingers
  • 1 bay leaf
Liquid
  • 4 cups vegetable broth low sodium preferred
  • 1/2 cup dry red wine optional; substitute with additional broth
Finishing
  • 2 tbsp olive oil divided
  • salt to taste
  • black pepper freshly ground, to taste
  • 1/4 cup fresh parsley chopped, for serving

Method
 

Prep
  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and cook until softened and just starting to turn golden at the edges, about 6 minutes. Stir in the garlic and tomato paste; cook for 1 minute until fragrant and the paste darkens slightly.
  2. Pour in the red wine (if using) and scrape up any browned bits from the pan. Let bubble for 30 seconds, then transfer everything to your slow cooker. Add the remaining 1 tablespoon olive oil to the same skillet, increase heat to medium-high, and sear the mushrooms until they release their liquid and turn golden in spots, about 5 minutes. Add to the slow cooker.
  3. Add the potatoes, carrots, celery, thyme, rosemary, bay leaf, and vegetable broth to the slow cooker. Stir to combine, nestling the vegetables into the liquid. Season with 1 teaspoon salt and 1/2 teaspoon pepper.
  4. Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the potatoes and carrots are tender when pierced with a fork but still hold their shape. The broth should have reduced slightly and taken on a rich, earthy color.
  5. Stir in the frozen peas during the last 10 minutes of cooking. Remove the bay leaf, taste and adjust seasoning with more salt and pepper as needed. Ladle into bowls and sprinkle with fresh parsley. Serve with crusty bread for soaking up the broth.

Notes

For a thicker stew, mash about 1 cup of the cooked potatoes against the side of the slow cooker and stir back in. The wine adds depth but the stew is still excellent without it - just use extra broth. This keeps beautifully for 4 days refrigerated and tastes even better the next day as the flavors meld.
