  • 4 slices Sourdough or country white bread
  • 4 oz Smoked Gouda cheese grated
  • 1 small Granny Smith or Honeycrisp apple thinly sliced
  • 2 tbsp Unsalted butter softened
  • 1 tsp Honey or maple syrup optional, for drizzling
  • 1 tsp Dijon mustard optional
  • 1/2 tsp Fresh thyme optional, chopped

Method
 

  1. Prepare Ingredients: Grate the smoked Gouda cheese. Thinly slice the apple. Ensure your butter is softened to room temperature for easy spreading.
  2. Assemble Bread: Lay out two slices of bread. Evenly spread 1/2 tablespoon of softened butter on one side of each bread slice. Flip the bread so the unbuttered side is facing up on your work surface.
  3. Layer Fillings: On the unbuttered side of one slice of bread, layer half of the grated smoked Gouda. Arrange half of the thinly sliced apple evenly over the cheese. If desired, drizzle with 1/2 teaspoon of honey or maple syrup and/or spread 1/2 teaspoon of Dijon mustard over the apples. Sprinkle with 1/4 teaspoon of chopped fresh thyme, if using. Top with the remaining grated Gouda.
  4. Complete Sandwich: Carefully place the second unbuttered bread slice on top of the filled slice, ensuring the buttered side is facing outwards.
  5. Preheat Skillet: Heat a large non-stick skillet or griddle over medium-low heat. It's crucial for the heat to be gentle to prevent burning and allow the cheese to melt properly.
  6. Grill Sandwiches: Carefully place the assembled sandwich into the preheated skillet. Cook for 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese is thoroughly melted and gooey. You may gently press down on the sandwich with a spatula during cooking to ensure even contact and melting.
  7. Serve: Remove the grilled cheese from the skillet, let it cool for about a minute to set the cheese, then slice in half diagonally and serve immediately.

Notes

Using medium-low heat is essential for a perfectly golden crust and fully melted cheese without burning the bread. For an extra crispy exterior, you can use mayonnaise instead of butter on the outside of the bread. Experiment with other apple varieties like Fuji for a sweeter profile, or Gala for a milder sweetness.
