Prepare the Tostada Shells
- Preheat your oven to 400°F (200°C). Arrange the corn tortillas in a single layer on one or two large baking sheets.
- Lightly brush both sides of each tortilla with vegetable oil (or use cooking spray) and sprinkle with a pinch of kosher salt.
- Bake for 5-7 minutes, then flip the tortillas and bake for another 3-5 minutes, or until they are golden brown, crispy, and completely stiff. Set aside.
Cook the Chipotle Chicken
- Pat the chicken breasts dry and season generously on both sides with salt and pepper.
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the chopped onion to the skillet and sauté for 4-5 minutes, until softened and translucent. Add the minced garlic and cook for another minute until fragrant.
- Stir in the minced chipotle peppers, adobo sauce, ground cumin, smoked paprika, and dried oregano. Cook for 1 minute, stirring constantly, to toast the spices.
- Pour in the fire-roasted tomatoes (with their juices) and the chicken broth. Scrape up any browned bits from the bottom of the pan. Bring the sauce to a simmer.
- Return the seared chicken breasts to the skillet, nestling them into the sauce. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the chicken is cooked through and tender (internal temperature reaches 165°F or 74°C).
- Transfer the cooked chicken to a cutting board or bowl. Use two forks to shred the chicken. Return the shredded chicken back to the skillet with the sauce. Stir to combine and let it simmer uncovered for 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken. Taste and adjust seasoning with more salt if needed.
Assemble the Tostadas
- Spread a layer of warmed refried beans onto each crispy tostada shell.
- Top the beans with a generous portion of the shredded chipotle chicken.
- Layer with your desired toppings, such as shredded lettuce, crumbled queso fresco, pico de gallo, avocado, and a dollop of sour cream. Garnish with fresh cilantro and serve immediately with lime wedges on the side.
Notes
Spice Level: For a milder flavor, use only 1 chipotle pepper and omit the seeds. For more heat, add an extra pepper or a dash of the adobo sauce.
