Smoky Roasted Baba Ganoush with Toasted Walnuts

  • 2 large eggplants about 1.5-2 lbs total, globe or Italian variety
  • 1/4 cup tahini
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic minced
  • 2 tbsp extra virgin olive oil plus more for drizzling
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/2-1 tsp salt to taste

  • 1/4 cup walnuts chopped
  • 2 tbsp fresh parsley chopped
  • pinch red pepper flakes optional

Method
 

Prepare the Eggplant
  1. Preheat your oven to 400°F (200°C). Wash the eggplants thoroughly. Pierce them several times with a fork or knife to allow steam to escape during roasting, which helps them cook evenly.
  2. Place the pierced eggplants directly on a baking sheet. Roast for 35-45 minutes, or until the eggplants are very soft and shriveled, and the skin is charred in spots. The internal flesh should be extremely tender.
  3. Remove the roasted eggplants from the oven. Let them cool slightly, enough to handle comfortably, about 10-15 minutes. Once cool, slice each eggplant lengthwise and scoop out the flesh into a colander placed over a bowl. Let it drain for at least 15 minutes to remove excess liquid, which is crucial for preventing a watery baba ganoush. You can gently press the flesh with a spoon to aid draining.
Toast Walnuts & Blend
  1. While the eggplant drains, heat a small dry skillet over medium-low heat. Add the chopped walnuts and toast for 3-5 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn them. Set aside.
  2. Transfer the drained eggplant flesh to a food processor. Add the tahini, fresh lemon juice, minced garlic, 2 tablespoons of olive oil, ground cumin, smoked paprika, salt, and black pepper.
  3. Process the mixture until smooth and creamy. If you prefer a chunkier texture, pulse a few times instead of continuous blending, or mash by hand in a bowl. Taste and adjust seasonings as needed, adding more salt, lemon juice, or cumin to your preference.
Serve
  1. Transfer the baba ganoush to a serving bowl. Drizzle generously with a good quality extra virgin olive oil. Garnish with the toasted walnuts, fresh chopped parsley, and a pinch of red pepper flakes if desired. Serve immediately with warm pita bread, fresh vegetables, or crackers.

Notes

For an extra smoky flavor, you can char the eggplants directly over an open flame on a gas stove burner (turning frequently with tongs) or on a hot grill until the skin is blackened and blistered, before roasting in the oven. This adds a more pronounced smoky taste. Baba ganoush can be stored in an airtight container in the refrigerator for up to 3-4 days.
