Marinate the Chicken

Make the Spicy Maple Butter
- Beat softened butter with maple syrup, remaining 1 tablespoon hot sauce, and cayenne until smooth and fluffy. This can be made ahead and rewarmed gently.
Assemble and Serve

Notes
Chicken thighs stay juicier than breasts when fried; if using breasts, pound to even thickness first. The waffle batter can be mixed the night before and held in the refrigerator; whisk briefly before using. For extra-crispy chicken, double-dredge: dip floured chicken back into buttermilk, then into flour again before frying.
