Prepare the Taco Meat
- Preheat oven to 400°F (200°C). In a large skillet, brown the ground beef over medium-high heat. Drain any excess grease.
- Add the diced yellow onion to the skillet with the beef and cook until softened, about 3-5 minutes.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until most of the liquid has evaporated and the meat is well-coated. Remove from heat.
Assemble the Taco Pizza
- Spread the warmed refried beans evenly over the pre-baked pizza crust, leaving a small border for the crust edge.
- Sprinkle half of the shredded Colby-Jack cheese over the refried bean layer.
- Evenly spread the seasoned ground beef mixture over the cheese layer.
- Sprinkle the remaining half of the shredded Colby-Jack cheese over the beef.
Bake the Pizza
- Place the pizza on a pizza pan or directly on the oven rack (if using a sturdy pan) and bake for 12-15 minutes, or until the cheese is melted, bubbly, and the crust is golden brown.
- Carefully remove the pizza from the oven and let it cool for 2-3 minutes.
Add Fresh Toppings
- While the pizza is still warm, dollop or drizzle sour cream and salsa over the top.
- Evenly scatter the shredded lettuce, diced tomatoes, black olives (if using), and pickled jalapeños (if using) over the pizza.
- Garnish with fresh cilantro and crushed tortilla chips for extra crunch.
Serve
- Slice the Taco Pizza into 8 pieces using a pizza cutter and serve immediately.
Notes
For an extra kick, use a spicy taco seasoning and hot salsa. You can also customize toppings with avocado, corn, or a drizzle of hot sauce. This pizza is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave.
