Prepare the Buffalo Chicken
- Pat chicken cubes dry with paper towels. In a medium bowl, toss chicken with olive oil, garlic powder, and black pepper until evenly coated.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
- Remove skillet from heat. Add 1/4 cup of the Buffalo wing sauce to the cooked chicken, tossing to coat completely. Set aside.
Assemble the Pizza
- Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
- On a lightly floured or cornmeal-dusted surface, stretch or roll out the pizza dough into a 12-14 inch circle. Carefully transfer the dough to a parchment-lined baking sheet or directly onto the preheated pizza stone.
- In a small bowl, whisk together the remaining 1/4 cup Buffalo wing sauce and the ranch or blue cheese dressing. Spread this mixture evenly over the pizza dough, leaving a 1/2-inch border for the crust.
- Sprinkle 1 cup of the mozzarella cheese over the sauce. Evenly distribute the buffalo chicken cubes and thinly sliced red onion over the cheese.
- Sprinkle the remaining 1/2 cup of mozzarella cheese and the crumbled blue cheese (if using) over the toppings.
Bake the Pizza
- Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Carefully remove the pizza from the oven. Let it cool for 2-3 minutes before slicing.
- Garnish with fresh chopped cilantro or parsley before serving.
Notes
For an extra crispy crust, preheat a pizza stone or an inverted baking sheet in the oven while preparing the pizza. You can also make your own pizza dough or use pre-made crusts for quicker assembly. Adjust the amount of Buffalo sauce to your preferred spice level.
