Spicy Cajun Alfredo Sauce

Ingredients
  

For the Sauce
  • 4 tbsp Unsalted Butter
  • 4 cloves Garlic minced
  • 2 cups Heavy Cream
  • 1/2 cup Chicken Broth low sodium
  • 2 tbsp Cajun Seasoning good quality blend (e.g., Tony Chachere's or homemade)
  • 1 cup Parmesan Cheese freshly grated
  • 1/2 tsp Salt adjust to taste, depending on seasoning blend
  • 1/4 tsp Black Pepper freshly ground
  • 1/4 tsp Cayenne Pepper optional, for extra heat
  • 1 tbsp Fresh Parsley chopped, for garnish (optional)

Method
 

Start the Roux and Aromatics
  1. In a large skillet or saucepan, melt the unsalted butter over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant. Be careful not to burn the garlic, as it can turn bitter.
Build the Creamy Base
  1. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Do not allow it to come to a rolling boil.
Infuse with Cajun Flavor
  1. Reduce the heat to low. Stir in the Cajun seasoning, salt, black pepper, and the optional cayenne pepper. Whisk constantly until all spices are well combined and evenly distributed.
  2. Gradually add the freshly grated Parmesan cheese, whisking continuously until the cheese is completely melted and the sauce is smooth and begins to thicken slightly.
Simmer and Serve
  1. Continue to simmer on low heat for another 5-7 minutes, whisking occasionally, until the sauce reaches your desired consistency. If it becomes too thick, you can add a tablespoon or two of milk or extra broth to thin it out.
  2. Taste the sauce and adjust the salt and pepper if necessary. Remove from heat.
  3. Serve the Spicy Cajun Alfredo Sauce immediately over your favorite pasta, grilled chicken, sautéed shrimp, or steamed vegetables. Garnish with fresh chopped parsley if desired.

Notes

This sauce is best served fresh. Leftover sauce can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, do so gently over low heat, adding a splash of milk or chicken broth and whisking constantly to restore its creamy consistency.
