Prepare the Batter
- In a large mixing bowl, crack the two eggs. Add milk (or water) and whisk vigorously until well combined and slightly frothy.
- To the egg mixture, add gram flour (if using), red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, salt, and black pepper. Whisk again until there are no lumps and the spices are evenly distributed.
- Stir in the finely minced green chili, finely chopped onion, and fresh chopped coriander. Mix well to combine all the ingredients into a fragrant, savory batter.
Cook the French Toast
- Place a frying pan or skillet over medium heat. Add about 1 teaspoon of oil or butter and let it heat up until shimmering.
- Carefully dip one slice of bread into the masala egg batter, ensuring both sides are thoroughly coated. Do not let it soak too long, or the bread might become soggy.
- Transfer the coated bread slice to the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through. Add more oil or butter as needed for subsequent slices.
Serving
- Remove the cooked Masala French Toast from the pan. Repeat with the remaining bread slices. Serve immediately with ketchup, chutney, or a side of yogurt.
Notes
Spice Level: Adjust the amount of green chili and red chili powder according to your preference. For less heat, remove the seeds from the green chili.
Bread Choice: While white bread is traditional, you can use whole wheat or multigrain bread for a healthier option. Medium-thick slices work best.
Gram Flour (Besan): Adding a small amount of gram flour helps create a slightly crispier exterior and prevents the bread from absorbing too much oil.
Serving Suggestions: This Masala French Toast is delicious on its own or paired with a simple tomato ketchup, a spicy green chutney, or a cooling raita.
