For the Spicy Mayo
  • 1 cup mayonnaise full-fat for best creaminess
  • 2 tablespoons Sriracha or more, to taste
  • 1 tablespoon fresh lime juice freshly squeezed
  • 1 teaspoon soy sauce low sodium preferred
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon toasted sesame oil
  • 0.5 teaspoon granulated sugar or a pinch of honey
  • 1-2 tablespoons cold water optional, for thinning

Method
 

  1. In a small mixing bowl, combine the mayonnaise, Sriracha, fresh lime juice, soy sauce, garlic powder, toasted sesame oil, and granulated sugar.
  2. Using a whisk, vigorously mix all the ingredients until they are thoroughly combined and the sauce is completely smooth and uniform in color. No streaks allowed!
  3. Give the sauce a taste test. This is your chance to make it perfect! Feel free to add more Sriracha for an extra kick, a little more lime juice for tang, or another pinch of sugar to balance the flavors.
  4. If you prefer a thinner sauce (great for drizzling!), add the cold water, 1 teaspoon at a time, whisking well after each addition, until you reach your desired consistency.
  5. Transfer your delicious spicy mayo to an airtight container or a squeeze bottle. While you can serve it immediately, for the best flavor, let it chill in the refrigerator for at least 30 minutes before serving. This allows all those wonderful flavors to meld together beautifully.

Notes

Customize the Heat: Don't be shy about adjusting the Sriracha. Start with the recommended amount and add more until you hit your perfect level of spice.
Make Ahead: This sauce can be made up to a week in advance and stored in an airtight container in the refrigerator. The flavors actually deepen overnight, making it even better the next day!
