Steak and Shrimp Scampi

Ingredients
  

For the Steak and Shrimp
  • 1 lb ribeye or sirloin steak cut into 1-inch cubes
  • 12 oz large shrimp peeled and deveined, tails off
  • 1 tsp kosher salt divided
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp olive oil divided
For the Scampi Sauce
  • 6 tbsp unsalted butter divided
  • 6 cloves garlic minced
  • 0.5 cup dry white wine such as Pinot Grigio
  • 3 tbsp lemon juice freshly squeezed
  • 0.25 tsp red pepper flakes or more to taste
  • 0.25 cup fresh parsley chopped
For Serving
  • 12 oz linguine or spaghetti
  • 0.25 cup Parmesan cheese grated, optional

Method
 

Prep
  1. Pat steak cubes and shrimp completely dry with paper towels. Season both with 0.5 teaspoon salt and the black pepper. Bring a large pot of salted water to a boil for the pasta.
Cook the Proteins
  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add steak cubes in a single layer and sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip and cook 2 minutes more for medium-rare. Transfer to a plate and tent with foil.
  2. Add remaining 1 tablespoon olive oil to the same skillet. Add shrimp in a single layer and cook 1-2 minutes per side until pink and just opaque. Transfer to the plate with the steak.
Make the Sauce and Finish
  1. Reduce heat to medium. Add 4 tablespoons butter to the skillet. Once melted, add garlic and red pepper flakes; cook 30 seconds until fragrant but not browned. Pour in wine and simmer 3-4 minutes until reduced by half. Stir in lemon juice and remaining 2 tablespoons butter until glossy.
  2. While the sauce simmers, cook pasta according to package directions until al dente. Reserve 0.5 cup pasta water, then drain.
  3. Return steak and shrimp to the skillet with any accumulated juices. Add cooked pasta and half the parsley; toss gently to coat, adding reserved pasta water 1 tablespoon at a time if needed to loosen the sauce. Serve immediately topped with remaining parsley and Parmesan if desired.

Notes

Dry your proteins thoroughly before searing - moisture is the enemy of a good crust. If you do not want to use wine, substitute with low-sodium chicken broth plus 1 tablespoon extra lemon juice. For a make-ahead shortcut, prep the garlic and parsley up to 24 hours ahead and store covered in the refrigerator.
