Steamed Clams with Italian Sausage

Ingredients
  

For the Clams
  • 3 lbs littleneck clams scrubbed clean, discard any that won't close
For the Broth
  • 8 oz hot Italian sausage casings removed, crumbled
  • 3 tbsp unsalted butter divided
  • 6 cloves garlic thinly sliced
  • 1 cup dry white wine such as Pinot Grigio or Sauvignon Blanc
  • 0.5 tsp crushed red pepper flakes plus more for serving
  • 1 tbsp fresh lemon juice freshly squeezed
  • 0.25 cup flat-leaf parsley roughly chopped
For Serving
  • 1 loaf crusty bread sliced and toasted

Method
 

Prep
  1. Soak clams in cold salted water for 20 minutes to purge sand. Lift out (don't pour) and scrub shells under cold running water. Discard any clams that stay open when tapped.
Cook the Sausage
  1. Heat 1 tablespoon butter in a large Dutch oven over medium-high heat. Add crumbled sausage and cook, breaking it up with a wooden spoon, until deeply browned and crisp in spots, about 6-8 minutes. Transfer to a plate with a slotted spoon, leaving the fat behind.
Build the Broth
  1. Reduce heat to medium. Add remaining 2 tablespoons butter and garlic to the pot. Cook, stirring constantly, until garlic is fragrant and just turning golden at the edges, about 2 minutes. Don't let it brown.
  2. Add white wine and red pepper flakes, scraping up any browned bits from the bottom. Simmer for 3 minutes to reduce slightly and burn off the alcohol.
Steam the Clams
  1. Add clams to the pot in a single layer. Cover and steam until clams open, 5-7 minutes, shaking the pot once halfway through. Discard any clams that don't open.
Finish and Serve
  1. Return sausage to the pot. Add lemon juice and half the parsley. Toss gently to combine. Taste the broth and add salt if needed (clams and sausage are already salty). Transfer to a large serving bowl, sprinkle with remaining parsley, and serve immediately with toasted bread for dipping.

Notes

Buy clams the day you cook them and store in the refrigerator uncovered on ice. Sweet or mild sausage works if you prefer less heat - just add a pinch more red pepper flakes. The broth is the star here, so don't skimp on the bread; a sourdough batard is ideal for soaking up every drop.
