Ingredients
  

For the Crispy Cauliflower
  • 1 head cauliflower large, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/2 cup cold water
  • 2 tbsp neutral oil for spraying/tossing (e.g., avocado, canola)
For the Sticky Sesame Sauce
  • 1/2 cup low sodium soy sauce
  • 1/4 cup rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar packed
  • 1 tbsp maple syrup or honey
  • 1 tbsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp cornstarch
  • 2 tbsp cold water
For Garnish
  • 1 tbsp toasted sesame seeds
  • 2 tbsp green onions sliced

Method
 

Prepare the Crispy Cauliflower
  1. Preheat your air fryer to 375°F (190°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, garlic powder, salt, and black pepper. Gradually add the cold water, whisking until a smooth, thick batter forms.
  3. Add the cauliflower florets to the batter and toss gently to ensure each piece is evenly coated.
  4. Working in batches, place the coated cauliflower in a single layer in the air fryer basket. Lightly spray the cauliflower with neutral oil.
  5. Air fry for 10-12 minutes, shaking the basket halfway through, until the cauliflower is golden brown and crispy. Repeat with any remaining batches. Set aside.
Make the Sticky Sesame Sauce
  1. While the cauliflower is cooking, combine the soy sauce, rice vinegar, sesame oil, brown sugar, maple syrup, grated ginger, and minced garlic in a medium saucepan. Whisk well.
  2. Heat the sauce over medium heat, bringing it to a gentle simmer.
  3. In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry.
  4. Slowly pour the cornstarch slurry into the simmering sauce, whisking continuously. Continue to whisk and cook for 1-2 minutes until the sauce thickens to a glossy, syrupy consistency. Remove from heat.
Combine and Serve
  1. Add the crispy air-fried cauliflower directly into the saucepan with the sticky sesame sauce.
  2. Toss gently with a spatula or tongs until all the cauliflower florets are thoroughly coated in the sauce.
  3. Transfer the Sticky Sesame Cauliflower to a serving platter. Garnish generously with toasted sesame seeds and sliced green onions.
  4. Serve immediately as a main course with rice or noodles, or as a flavorful side dish.

Notes

For an oven-baked version: Arrange coated cauliflower on a parchment-lined baking sheet and bake at 400°F (200°C) for 25-30 minutes, flipping halfway, until golden and tender-crisp.
This dish is best served fresh for optimal crispiness. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days, though the cauliflower may soften. Reheat gently in a pan or air fryer for a few minutes to regain some crispness.
