  • 1 cup frozen mango chunks for best texture
  • 1 cup carrots peeled and roughly chopped
  • 1 cup orange juice freshly squeezed or store-bought, unsweetened
  • 0.5 inch fresh ginger peeled and grated or finely chopped
  • 0.25 tsp ground cinnamon
  • 0.5 cup water or plant-based milk almond, oat, or coconut milk work well, adjust for desired consistency

  • 1-2 tsp maple syrup or honey to taste, if more sweetness is desired
  • 0.5 scoop vanilla protein powder for added protein
  • 0.25 tsp turmeric powder for an extra health boost

Method
 

Preparation
  1. Prepare your ingredients: If using whole carrots, peel them and chop them into 1-inch pieces. Peel the fresh ginger and grate it or finely chop it.
Blend
  1. Add all the main ingredients to your high-speed blender: frozen mango chunks, chopped carrots, orange juice, grated ginger, ground cinnamon, and water or plant-based milk. If using any optional add-ins like maple syrup or protein powder, add them now as well.
  2. Secure the lid and blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure everything is incorporated.
  3. Check the consistency. If the smoothie is too thick for your liking, add a little more water or plant-based milk (1-2 tablespoons at a time) and blend again until the desired consistency is reached. Taste and adjust sweetness if necessary with maple syrup or honey.
Serve
  1. Pour the Sunshine Mango Carrot Smoothie into two glasses and serve immediately. Garnish with a small slice of mango or a sprinkle of cinnamon, if desired.

Notes

For a colder smoothie without diluting the flavor, use chilled orange juice and water, or add a few ice cubes when blending. If you don't have frozen mango, you can use fresh mango and add a handful of ice cubes to achieve a cold, thick consistency. This mango carrot smoothie is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
