Preparation
- Prepare your ingredients: If using whole carrots, peel them and chop them into 1-inch pieces. Peel the fresh ginger and grate it or finely chop it.
Blend
- Add all the main ingredients to your high-speed blender: frozen mango chunks, chopped carrots, orange juice, grated ginger, ground cinnamon, and water or plant-based milk. If using any optional add-ins like maple syrup or protein powder, add them now as well.
- Secure the lid and blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender a few times to ensure everything is incorporated.
- Check the consistency. If the smoothie is too thick for your liking, add a little more water or plant-based milk (1-2 tablespoons at a time) and blend again until the desired consistency is reached. Taste and adjust sweetness if necessary with maple syrup or honey.
Serve
- Pour the Sunshine Mango Carrot Smoothie into two glasses and serve immediately. Garnish with a small slice of mango or a sprinkle of cinnamon, if desired.
Notes
For a colder smoothie without diluting the flavor, use chilled orange juice and water, or add a few ice cubes when blending. If you don't have frozen mango, you can use fresh mango and add a handful of ice cubes to achieve a cold, thick consistency. This mango carrot smoothie is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
