Ingredients
  

For the Fruit Salad
  • 3 large Peaches ripe, pitted and sliced
  • 2 cups Strawberries hulled and quartered
  • 1 cup Blueberries fresh
  • 1 cup Raspberries fresh
For the Lime-Mint Dressing
  • 2 tbsp Lime Juice freshly squeezed
  • 1 tbsp Honey or maple syrup for vegan option
  • 1 tbsp Fresh Mint finely chopped
  • 1/2 tsp Lime Zest

Method
 

Prepare the Fruit
  1. Gently wash all the berries and peaches under cool running water. Pat them dry thoroughly.
  2. Hull and quarter the strawberries. Pit and slice the peaches into bite-sized pieces.
  3. In a large mixing bowl, combine the sliced peaches, quartered strawberries, blueberries, and raspberries. Set aside.
Make the Dressing
  1. In a small bowl, whisk together the fresh lime juice, honey (or maple syrup), finely chopped fresh mint, and lime zest until well combined.
Assemble the Salad
  1. Pour the lime-mint dressing over the mixed fruit in the large bowl.
  2. Gently toss the fruit salad until all the fruit is evenly coated with the dressing.
Serve
  1. Serve immediately for best freshness, or chill in the refrigerator for at least 30 minutes before serving. Enjoy!

Notes

For extra crunch, you can add a handful of chopped toasted almonds or pecans. This salad is best enjoyed the same day it's made, as berries can become soft over time. Store any leftovers in an airtight container in the refrigerator for up to 1 day.
