Ingredients
  

For the Bread
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh rhubarb finely diced (about 1/4 to 1/2 inch pieces)
Optional Streusel Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp cold unsalted butter cut into small pieces

Method
 

Prepare for Baking
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper leaving an overhang on the long sides for easy removal.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the 2 cups all-purpose flour, granulated sugar, baking soda, and salt. Make a well in the center.
Mix Wet Ingredients
  1. In a separate medium bowl, whisk together the eggs, vegetable oil, buttermilk, and vanilla extract until well combined.
Combine and Fold
  1. Pour the wet ingredients into the well of the dry ingredients. Stir with a rubber spatula until just combined. Be careful not to overmix; a few lumps are fine.
  2. Gently fold in the diced rhubarb until evenly distributed throughout the batter.
Optional Streusel Topping (if using)
  1. In a small bowl, combine 1/4 cup flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Sprinkle evenly over the top of the batter in the loaf pan.
Bake
  1. Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean. If the top is browning too quickly, you can loosely tent it with aluminum foil during the last 15-20 minutes of baking.
  2. Remove the loaf pan from the oven and let it cool in the pan on a wire rack for 10-15 minutes.
Cool and Serve
  1. Carefully remove the bread from the pan (using the parchment overhang if applicable) and transfer it to the wire rack to cool completely before slicing and serving. This ensures the bread sets properly and is easier to cut.

Notes

For best results, do not overmix the batter; overmixing can lead to a tough bread. This bread stores well at room temperature, tightly wrapped, for up to 3 days, or in the refrigerator for up to 5 days. It can also be frozen for up to 3 months. If you don't have buttermilk, you can make a substitute by adding 1/2 tablespoon of lemon juice or white vinegar to a 1/2 cup measuring cup, then filling the rest with regular milk. Let it sit for 5 minutes before using.
