Preparation
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Wash, peel, and trim the carrots. Cut them into uniform 2-inch pieces. For thicker carrots, you can halve or quarter them lengthwise before cutting into pieces to ensure even cooking.
Seasoning & Roasting
- In a large mixing bowl, combine the cut carrots, olive oil, honey, chopped fresh thyme, garlic powder, salt, and black pepper. Toss well to ensure all carrots are evenly coated.
- Spread the seasoned carrots in a single layer on the prepared baking sheet. Make sure they are not overcrowded, as this will steam them instead of roasting. Use two baking sheets if necessary.
- Roast for 20-25 minutes, or until the carrots are tender-crisp and nicely caramelized around the edges. Toss the carrots gently halfway through the cooking time (around 10-12 minutes) to ensure even browning.
Serve
- Remove from the oven and transfer to a serving dish. Garnish with fresh chopped parsley, if desired. Serve immediately as a delicious side dish.
Notes
For a touch of spice, add a pinch of red pepper flakes to the seasoning mix. Leftover Honey Roasted Carrots can be stored in an airtight container in the refrigerator for up to 3-4 days and reheated gently.
