Ingredients
  

  • 1.5 lbs Carrots medium, peeled and cut into 2-inch pieces
  • 3 tbsp Honey liquid
  • 2 tbsp Olive Oil
  • 1 tbsp Fresh Thyme leaves, finely chopped
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • 1 tbsp Fresh Parsley chopped, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Wash, peel, and trim the carrots. Cut them into uniform 2-inch pieces. For thicker carrots, you can halve or quarter them lengthwise before cutting into pieces to ensure even cooking.
Seasoning & Roasting
  1. In a large mixing bowl, combine the cut carrots, olive oil, honey, chopped fresh thyme, garlic powder, salt, and black pepper. Toss well to ensure all carrots are evenly coated.
  2. Spread the seasoned carrots in a single layer on the prepared baking sheet. Make sure they are not overcrowded, as this will steam them instead of roasting. Use two baking sheets if necessary.
  3. Roast for 20-25 minutes, or until the carrots are tender-crisp and nicely caramelized around the edges. Toss the carrots gently halfway through the cooking time (around 10-12 minutes) to ensure even browning.
Serve
  1. Remove from the oven and transfer to a serving dish. Garnish with fresh chopped parsley, if desired. Serve immediately as a delicious side dish.

Notes

For a touch of spice, add a pinch of red pepper flakes to the seasoning mix. Leftover Honey Roasted Carrots can be stored in an airtight container in the refrigerator for up to 3-4 days and reheated gently.
