Thai Green Curry with Tofu

Ingredients
  

For the Tofu
  • 14 oz extra-firm tofu pressed and cubed
  • 2 tbsp neutral oil such as vegetable or grapeseed
For the Curry
  • 3 tbsp green curry paste Mae Ploy or Mae Sri brand preferred
  • 14 oz full-fat coconut milk 1 can, not light
  • 0.5 cup vegetable broth low sodium
  • 0.5 cup Thai basil leaves packed, or substitute Italian basil
For the Vegetables
  • 8 oz Japanese eggplant cut into 1-inch chunks
  • 1 red bell pepper cut into 1-inch pieces
  • 8 oz bamboo shoots drained and rinsed
  • 1 tbsp palm sugar or brown sugar
  • 1 tbsp soy sauce
  • 1 lime juiced, about 1.5 tbsp

Method
 

Prep
  1. Wrap tofu in paper towels, place a heavy pan on top, and press for 10 minutes to remove excess water. Cut into 1-inch cubes and pat very dry. This step is essential for getting crispy edges.
Cook the Tofu
  1. Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering. Add tofu in a single layer and cook undisturbed for 4-5 minutes until deep golden on the bottom. Flip and cook 3-4 minutes more until most edges are crisp. Transfer to a plate.
Build the Curry
  1. Reduce heat to medium. Add curry paste to the same skillet and fry for 1 minute, stirring constantly, until very fragrant and the oil begins to separate slightly.
  2. Pour in coconut milk and vegetable broth, scraping up any browned bits. Bring to a gentle simmer and cook for 3 minutes until slightly thickened.
  3. Add eggplant, bell pepper, and bamboo shoots. Simmer for 8-10 minutes until eggplant is tender when pierced with a knife but still holds its shape. Stir in sugar and soy sauce.
  4. Return tofu to the pan and gently fold to coat. Simmer 2 minutes to heat through. Remove from heat, stir in Thai basil and lime juice. Taste and adjust with more lime or soy sauce if needed. Serve immediately over jasmine rice.

Notes

For extra depth, fry 1 tablespoon of minced garlic and ginger before adding the curry paste. If you cannot find Thai basil, use Italian basil plus a pinch of fresh mint. The curry keeps well for 3 days but the basil is best added fresh to each serving.
