Ingredients
  

For the Creamy Caesar Dressing
  • 3/4 cup mayonnaise
  • 2 cloves garlic finely minced
  • 2 tsp anchovy paste or 2 minced anchovy fillets
  • 1/4 cup Parmesan cheese finely grated
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/4 tsp black pepper freshly ground
  • 1-2 tbsp milk or water to thin, if needed
For the Grilled Chicken
  • 1.5 lbs boneless, skinless chicken breasts about 2 large breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
For Assembly
  • 4 large ciabatta rolls or 8 slices thick-cut sourdough
  • 1 tbsp olive oil for toasting the bread
  • 1 large head romaine lettuce washed and roughly chopped
  • 1/4 cup shaved Parmesan cheese for topping

        Notes

        Make-Ahead Tip: The Caesar dressing can be made up to 3 days in advance and stored in an airtight container in the refrigerator.
        Chicken Options: If you don't have a grill, you can bake the chicken at 400°F (200°C) for 20-25 minutes or use an air fryer at 380°F (190°C) for 15-20 minutes, flipping halfway through. Leftover rotisserie chicken also works great in a pinch!
        Storage: This sandwich is best enjoyed fresh. To prevent sogginess, store the toasted bread separately from the dressed chicken and lettuce mixture, and assemble just before eating.
