Ingredients
  

For the Chopped Filling
  • 2 cups Romaine Lettuce finely shredded or chopped
  • 1 medium Tomato deseeded and finely diced
  • 1/4 cup Red Onion very finely diced
  • 1/4 cup Banana Peppers sliced, then finely chopped
  • 1/4 cup Black Olives pitted and finely chopped
  • 4 slices Provolone Cheese about 2 oz, finely chopped
  • 2 oz Pepperoni thinly sliced, then finely chopped
  • 2 oz Hard Salami thinly sliced, then finely chopped
  • 2 oz Deli Ham thinly sliced, then finely chopped
For the Italian Vinaigrette
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Garlic Powder or 1/2 clove fresh garlic, minced
  • 1/4 tsp Salt or to taste
  • Pinch Black Pepper freshly ground
To Assemble
  • 2 Hoagie Rolls or sub rolls, about 8-10 inches each, split lengthwise

Method
 

Prepare the Chopped Filling
  1. In a large mixing bowl, combine the finely chopped romaine lettuce, deseeded and diced tomato, very finely diced red onion, finely chopped banana peppers, pitted and finely chopped black olives, finely chopped provolone cheese, finely chopped pepperoni, finely chopped hard salami, and finely chopped deli ham.
Make the Vinaigrette
  1. In a small separate bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, garlic powder (or minced fresh garlic), salt, and freshly ground black pepper until thoroughly combined.
Dress and Final Chop
  1. Pour the prepared vinaigrette over the chopped filling ingredients in the large bowl. Toss thoroughly with a spatula or large spoon until all ingredients are evenly coated. For an even finer 'chopped' texture, use a bench scraper or two knives to further chop the mixture together in the bowl until it reaches your desired consistency.
Assemble the Sandwiches
  1. Carefully split each hoagie roll lengthwise, but do not cut all the way through, creating a hinge. If desired, lightly toast the rolls in a toaster oven or air fryer for 1-2 minutes until slightly warm and crisp.
  2. Generously spoon the chopped Italian filling into each prepared hoagie roll, pressing it down firmly to compact the ingredients. Close the sandwiches.
