Ultimate Christmas Kitchen Sink Cookies

Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter softened to room temperature
  • 3/4 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
The 'Kitchen Sink' Mix-Ins
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1 cup potato chips roughly crushed
  • 1 cup mini pretzels roughly crushed
  • 1/2 cup toffee bits
  • 1/2 cup Christmas M&Ms or sprinkles plus more for decorating

Method
 

Prepare the Dough
  1. Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  2. In a large bowl using a stand mixer or a hand mixer, cream together the softened butter, light brown sugar, and granulated sugar on medium-high speed until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Add Mix-Ins and Bake
  1. Gently fold in all the mix-ins: semi-sweet chocolate chips, white chocolate chips, crushed potato chips, crushed pretzels, toffee bits, and Christmas M&Ms/sprinkles. The dough will be very chunky.
  2. Drop rounded tablespoons of dough (about 1.5 tablespoons each, or use a medium cookie scoop) onto the prepared baking sheets, spacing them about 2 inches apart.
  3. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. For a festive touch, you can press a few extra M&Ms or sprinkles onto the tops of the hot cookies right after they come out of the oven.
  4. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to get creative with the mix-ins! Leftover chopped nuts, dried cranberries, caramel bits, or even crushed cornflakes work wonderfully. For a chewier cookie, slightly underbake them. Store cooled cookies in an airtight container at room temperature for up to 5 days.
