Ingredients
  

For the Caramelized Onions
  • 2 tbsp Unsalted Butter
  • 1 large Yellow Onion thinly sliced
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper freshly ground
For the Au Jus
  • 2 cups Beef Broth low-sodium
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Soy Sauce low-sodium
  • 1/2 tsp Onion Powder
  • 1/4 tsp Garlic Powder
For the Sliders
  • 1 package (12 count) Hawaiian Sweet Rolls
  • 1 lb Deli Roast Beef thinly sliced
  • 8 slices Provolone Cheese or Swiss cheese
For the Butter Topping
  • 1/2 cup Unsalted Butter melted (1 stick)
  • 1 tbsp Dijon Mustard
  • 1 tbsp Dried Minced Onion
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp Poppy Seeds

Method
 

Prepare Onions and Au Jus
  1. In a large skillet over medium heat, melt 2 tbsp of butter. Add the sliced onion, salt, and pepper. Cook, stirring occasionally, for 20-25 minutes until the onions are soft, sweet, and deeply golden brown. Set aside.
  2. While the onions are caramelizing, combine all the au jus ingredients (beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder) in a small saucepan. Bring to a simmer over medium heat, then reduce the heat to low to keep it warm while you assemble the sliders.
Assemble the Sliders
  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. Without separating the individual rolls, use a serrated knife to slice the entire slab of Hawaiian rolls in half horizontally, creating a top and bottom bun slab. Place the bottom slab into the prepared baking dish.
  3. Layer the ingredients evenly over the bottom rolls: first, arrange the thinly sliced roast beef, then top with the caramelized onions, and finally, lay the provolone cheese slices over the top to cover everything. Place the top slab of rolls back on.
Bake and Serve
  1. In a small bowl, whisk together the melted butter, Dijon mustard, dried minced onion, Worcestershire sauce, and poppy seeds.
  2. Evenly pour or brush the butter mixture over the tops of the sliders. Use the brush to make sure the topping gets into the crevices between the rolls.
  3. Cover the baking dish tightly with aluminum foil and bake for 15 minutes. This allows the sliders to steam and the cheese to melt thoroughly.
  4. Remove the foil and continue to bake for another 5-10 minutes, or until the tops of the rolls are golden brown and toasted, and the cheese is bubbly.
  5. Let the sliders rest for 2-3 minutes before using a knife to cut them apart. Serve immediately with the warm au jus on the side for dipping.

Notes

Roast Beef Tip: Use a high-quality, thinly sliced deli roast beef for the best texture. London broil or top round works well.
Make-Ahead: You can assemble the sliders (without the butter topping) up to 4 hours in advance. Cover and refrigerate. When ready to bake, add the butter topping and add 5-10 minutes to the covered baking time.
Storage: Store leftover sliders in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer for best results. Store leftover au jus separately.
