Prepare the Fillings
- Heat a large non-stick skillet over medium heat. Add 1 tablespoon of butter or olive oil. Break the leftover stuffing into two flat patties or crumble it evenly. Pan-fry the stuffing for 3-5 minutes per side until golden brown and crispy. If using an air fryer, air fry at 375°F (190°C) for 6-8 minutes, flipping halfway, until crispy. Remove the crispy stuffing from the skillet and set aside.
- In the same skillet (if applicable, wipe clean if necessary), add the thinly sliced turkey breast. Cook for 1-2 minutes per side until just warmed through. Be careful not to overcook, as turkey can dry out quickly. Remove from heat.
Assemble the Sandwich
- While the turkey and stuffing are warming, toast the sourdough bread slices to your desired crispness using a toaster, oven, or by pan-frying with a little butter for extra flavor.
- On two slices of the toasted bread, spread 1 tablespoon of mayonnaise or garlic aioli evenly.
- Layer half of the warmed turkey slices on top of the spread on each sandwich base. Follow with one crispy stuffing patty (or half of the crumbled stuffing) per sandwich.
- Spoon half of the cranberry sauce over the stuffing on each sandwich. Top with a generous handful of fresh arugula or mixed greens.
- Season with a pinch of salt and freshly ground black pepper, if desired. Top each sandwich with the remaining toasted bread slice.

Notes
For an even richer sandwich, you can lightly butter the bread before toasting. If your stuffing is very crumbly, pressing it into a patty shape before frying makes it easier to handle and ensures a crispy texture. This sandwich is best enjoyed fresh to maintain the crispy texture of the stuffing.
