Vibrant Caprese Pasta Salad

Ingredients
  

For the Pasta
  • 12 oz pasta fusilli, rotini, or orecchiette, uncooked
  • 8 cups water
  • 1 tbsp salt for boiling pasta
For the Salad
  • 1 pint cherry tomatoes halved
  • 8 oz fresh mozzarella balls bocconcini or ciliegine, halved or quartered
  • 1/2 cup fresh basil leaves roughly chopped or torn
For the Balsamic Glaze
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey or maple syrup optional, for sweetness
  • 1/4 tsp black pepper freshly ground
For Assembly
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt or to taste

Method
 

Prepare the Pasta
  1. Bring 8 cups of water and 1 tablespoon of salt to a rolling boil in a large pot. Add the pasta and cook according to package directions until al dente.
  2. Once cooked, drain the pasta thoroughly using a colander. Rinse briefly with cold water to stop the cooking process and cool it down. Transfer the cooled pasta to a large mixing bowl.
Make the Balsamic Glaze
  1. While the pasta cooks, combine balsamic vinegar, honey (if using), and freshly ground black pepper in a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the glaze thickens enough to coat the back of a spoon. Be careful not to reduce it too much; it will thicken more as it cools. Remove from heat and set aside to cool.
Assemble and Serve
  1. To the large mixing bowl with the cooled pasta, add the halved cherry tomatoes, fresh mozzarella balls, and chopped fresh basil leaves.
  2. Drizzle the extra virgin olive oil over the pasta mixture. Pour about half of the prepared balsamic glaze over the salad. Add 1/4 teaspoon of salt.
  3. Gently toss all ingredients together until well combined and coated. Taste and adjust seasoning, adding more salt or balsamic glaze if desired. Serve immediately, or chill for at least 30 minutes for flavors to meld.

Notes

This salad is best served fresh or chilled within 1-2 days. If making ahead, add the fresh basil just before serving to keep it vibrant. Leftover balsamic glaze can be stored in an airtight container in the fridge for up to 2 weeks.
