1. Prepare the Salad Components
- If not already done, wash the baby spinach thoroughly and dry it using a salad spinner or paper towels. Place in a large mixing bowl.
- Hull and slice the fresh strawberries. Add them to the bowl with the spinach.
- In a small dry skillet over medium-low heat, toast the chopped walnuts for 3-5 minutes, stirring frequently, until fragrant and lightly golden. Be careful not to burn them. Let cool slightly.
- If using, thinly slice or finely dice the red onion and add to the bowl.
- If using, crumble the feta or goat cheese and set aside.
2. Make the Balsamic Poppy Seed Dressing
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, poppy seeds, sea salt, and black pepper until well combined and emulsified. Taste and adjust seasonings as needed.
3. Assemble the Salad
- Just before serving, pour about half of the prepared dressing over the spinach and strawberries in the large mixing bowl.
- Gently toss the salad to ensure all ingredients are lightly coated. Add more dressing if desired, but avoid over-dressing.
- Divide the salad among serving plates.
- Sprinkle the toasted walnuts and crumbled feta/goat cheese (if using) evenly over each serving.

Notes
For best results, dress the salad just before serving to prevent the spinach from wilting. Leftover dressing can be stored in an airtight container in the refrigerator for up to 5 days; shake well before use. To make this salad a complete meal, consider adding grilled chicken, salmon, or chickpeas for extra protein.
