Roast the Sweet Potatoes & Chickpeas
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the cubed sweet potatoes and the thoroughly dried chickpeas. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper. Toss well until everything is evenly coated.
- Spread the sweet potato and chickpea mixture in a single, even layer on the prepared baking sheet. Avoid overcrowding the pan to ensure they roast instead of steam.
- Roast for 25-30 minutes, flipping halfway through. The sweet potatoes should be tender and lightly caramelized, and the chickpeas should be golden and crispy.
Cook the Quinoa
- While the vegetables are roasting, cook the quinoa. In a small saucepan, combine the rinsed quinoa and 1 cup of water or vegetable broth. Bring to a rolling boil.
- Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan with a tight-fitting lid, and let it simmer for 15 minutes, or until all the liquid has been absorbed.
- Remove from the heat and let it stand, still covered, for 5 minutes. Then, uncover and fluff the quinoa with a fork.
Prepare the Dressing
- In a small bowl or a jar with a lid, whisk together the tahini, fresh lemon juice, maple syrup, and minced garlic until combined. The mixture will be thick.
- Slowly add 2 tablespoons of warm water and whisk vigorously until the dressing is smooth and creamy. Add more water, 1 tablespoon at a time, until you reach your desired drizzling consistency. Season with a pinch of salt to taste.
Assemble the Buddha Bowls
- To build your bowls, divide the cooked quinoa and fresh kale or spinach between two bowls, creating a base.
- Artfully arrange the roasted sweet potatoes, crispy chickpeas, sliced avocado, and sliced cucumber on top of the base.
- Drizzle generously with the lemon-tahini dressing and garnish with a sprinkle of sesame seeds. Serve immediately and enjoy!
Notes
Storage: Store leftover components separately in airtight containers in the refrigerator for up to 3 days. Reheat the sweet potatoes and quinoa before assembling. The dressing may thicken in the fridge; simply stir in a little water to thin it out before serving.
Variations: Feel free to add other roasted vegetables like broccoli or bell peppers. For extra protein, add baked tofu or edamame. You can also swap quinoa for brown rice or another grain of your choice.
