  • 1.5 cups fresh blueberries rinsed
  • 4 oz feta cheese crumbled
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh mint leaves roughly chopped

  • 2 tbsp fresh lime juice freshly squeezed
  • 1 tsp honey or maple syrup
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp kosher salt
  • 1 pinch black pepper freshly ground

Method
 

Prep the Salad Components
  1. Carefully cut the watermelon into 1-inch cubes and place them into a large mixing bowl. Rinse the fresh blueberries and add them to the bowl with the watermelon.
  2. Thinly slice the red onion and add it to the bowl. Roughly chop the fresh mint leaves and sprinkle them in. Crumble the feta cheese over the fruit and herbs.
Make the Dressing
  1. In a small bowl, whisk together the fresh lime juice, honey (or maple syrup), extra virgin olive oil, kosher salt, and a pinch of black pepper until well combined.
Assemble and Serve
  1. Pour the prepared dressing evenly over the salad ingredients in the large bowl.
