White Chocolate Blueberry Oatmeal Cookies

  • 1.5 cups all-purpose flour spooned and leveled
  • 2 cups old-fashioned rolled oats not instant
  • 1 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp fine sea salt
Wet Ingredients
  • 1 cup unsalted butter 2 sticks, softened but still cool
  • 0.75 cup light brown sugar packed
  • 0.5 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
Mix-Ins
  • 6 oz white chocolate coarsely chopped, or white chocolate chips
  • 1 cup fresh blueberries gently patted dry

Method
 

Prep
  1. Position racks in upper and lower thirds of oven and preheat to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, oats, baking soda, cinnamon, and salt until evenly combined.
  3. In a large bowl, beat butter with both sugars on medium speed until light and fluffy, about 3 minutes. Scrape down bowl and beat in eggs one at a time, then vanilla, until fully incorporated.
  4. Reduce mixer to low and gradually add dry ingredients, mixing just until no flour streaks remain. Do not overmix.
  5. Gently fold in white chocolate with a spatula. Add blueberries and fold carefully 2 to 3 times to distribute without crushing. The dough will look streaky with berry juice - this is fine.
  6. Using a 2-tablespoon scoop or heaping tablespoon, drop dough 2 inches apart onto prepared sheets. Bake 10 to 12 minutes, rotating sheets halfway through, until edges are golden and centers look slightly underdone. Cool on sheets 5 minutes, then transfer to wire racks.

Notes

Frozen blueberries work in a pinch - do not thaw, and add 2 extra minutes to bake time. For bakery-style thick cookies, chill dough 30 minutes before baking. These keep well at room temperature 3 days or frozen up to 2 months.
