White Chocolate Cranberry Cookies

Ingredients
  

Dry Ingredients
  • 2.25 cups all-purpose flour spooned and leveled
  • 1 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened, 2 sticks
  • 0.75 cup granulated sugar
  • 0.75 cup light brown sugar packed
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
Mix-Ins
  • 1.5 cups white chocolate chips
  • 1 cup dried cranberries

Method
 

Prep
  1. Preheat oven to 375°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3 minutes. Scrape down the bowl.
  4. Beat in eggs one at a time, then add vanilla. Mix until just combined.
  5. Reduce mixer speed to low and gradually add flour mixture. Mix until just combined with no dry streaks remaining.
  6. Stir in white chocolate chips and dried cranberries by hand using a wooden spoon or spatula.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake 10-12 minutes until edges are golden and centers look slightly underdone. Cool on pans 5 minutes, then transfer to wire racks.

Notes

For extra chewy cookies, chill the dough 30 minutes before baking. Swap in dark chocolate chips for a less sweet cookie. Dough can be frozen up to 3 months - scoop into balls and freeze on a sheet, then store in a bag; bake from frozen, adding 2-3 minutes.
