Winter Jewel Christmas Fruit Salad

Ingredients
  

For the Fruit Salad
  • 2 Granny Smith apples cored and diced into 1/2-inch pieces
  • 2 Honeycrisp or Fuji apples cored and diced into 1/2-inch pieces
  • 1 cup Green grapes halved
  • 1 cup Red grapes halved
  • 3 Kiwis peeled and sliced
  • 1 cup Pomegranate arils (from 1 medium pomegranate)
  • 1/2 cup Toasted pecans roughly chopped
  • 1/4 cup Fresh cranberries for garnish
For the Spiced Yogurt Dressing
  • 1 cup Plain Greek yogurt full-fat recommended
  • 3 tbsp Maple syrup or to taste
  • 1 tsp Orange zest
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 tsp Vanilla extract

Method
 

Prepare the Fruit
  1. Wash and thoroughly dry all the fruits. Core and dice the Granny Smith and Honeycrisp apples into bite-sized (about 1/2-inch) pieces. Halve the red and green grapes. Peel and slice the kiwis.
  2. In a large mixing bowl, combine the diced apples, halved grapes, sliced kiwis, and pomegranate arils. Gently toss to mix.
Make the Dressing & Assemble
  1. In a separate small bowl, whisk together the plain Greek yogurt, maple syrup, orange zest, ground cinnamon, ground nutmeg, and vanilla extract until the dressing is smooth and well combined.
  2. Pour the spiced yogurt dressing over the mixed fruit in the large bowl. Use a spatula to gently fold the dressing into the fruit until everything is evenly coated.
  3. For the best presentation and texture, transfer the fruit salad to a serving dish. Just before serving, sprinkle the top with the chopped toasted pecans and fresh cranberries for a festive garnish.

Notes

For best results, serve immediately to keep the fruit crisp. If making ahead, prepare the fruit and dressing separately and combine just before serving. To prevent apples from browning, you can toss them with a teaspoon of lemon juice. The fruit mix and dressing can be stored in separate airtight containers in the refrigerator for up to 24 hours. Feel free to substitute fruits like pears or add mandarin oranges for extra flavor.
