- Peel, core, and roughly chop the apple. Peel and roughly chop the shallot.
- In a blender, combine the chopped apple, chopped shallot, apple cider vinegar, water, Dijon mustard, maple syrup (or honey), salt, and black pepper.
- Blend on high speed until the mixture is completely smooth and pureed, scraping down the sides of the blender as needed. This may take 1-2 minutes.
- With the blender running on low speed, slowly drizzle in the extra virgin olive oil until the vinaigrette is fully emulsified and creamy.
- Taste the vinaigrette and adjust seasonings if necessary. You might want more salt, pepper, or a touch more maple syrup depending on your preference and the sweetness of your apple.
- Serve immediately over your favorite salads, or transfer to an airtight jar or bottle and refrigerate.
Notes
Storage: Store the Apple Vinaigrette in an airtight container in the refrigerator for up to 5-7 days. It may separate upon standing; simply shake well before each use.
Variations: For an herbaceous twist, add a few sprigs of fresh thyme or a tablespoon of chopped fresh parsley or chives to the blender in step 2. You can also add a small clove of garlic with the shallot for a more pungent flavor.
